OK, let's give this a go. At this moment in time it would probably be (in alphabetical order - and assuming live albums, anthologies and compilations count?):

'79 Revisited
Agent Steel - Unstoppable Force
Diamond Head - White Album
Iron Maiden - Iron Maiden
Iron Maiden - Seventh Son of a Seventh Son
Judas Priest - Sad Wings of Destiny
Mercyful Fate - Don't Break the Oath
Rainbow - Live in Germany 1976
Riot - Thundersteel
Sanctus - Music for Mars

For the sake of it, here's another 10 that on another day could easily have made my top 10:
Agent Steel - Skeptics Apocalypse
Black Sabbath - Sabbath Bloody Sabbath
Dark Angel - Darkness Descends
Dio - Holy Diver
Fates Warning - Awaken the Guardian
Gotham City - The Unknown
Megadeth - Peace Sells... But Who's Buying?
Metal Church - Hanging in the Balance
Queensryche - Operation Mindcrime
Racer X - Street Lethal

It's impossible to pick only 10 albums...but these are my 10 personal most important albums (all of them I'm listening since I was a kid. So they are my roots) - in no particular order:

King Diamond - "Them" (or is it Abigail?!?) - "Them" was my first King Diamond experience and it blew my mind! I was a different person after I listened to this album!!

Mercyful Fate - Melissa (My absolute fave from Mercyful Fate! It's atmosphere is incredible dark and gloomy. Every song is pure magic! But it was hard to choose between Melissa and Don't Break The Oath!)

Iron Maiden - Live After Death (haha, here I cheated! Live After Death combines everything what is GREAT about this band!)

Metallica - Ride The Lightning (This one's my absolute favourite when it comes to Metallica! Everything is perfect from the Speed Metal Killer "Fight Fire With Fire" at the beginning to the most epic instrumental ending "Call Of Ktulu" - it's more mature and perfect than Kill 'em All and grabs you more by the balls than Master Of Puppets - so it's the winner!)

Anthrax - Among The Living (I listened to the album the first time when I was 8 years old - one year after it's release. It freaked me out completely: Stakkato Thrash Riff-Mania mixed with a melodic Heavy Metal singer named Joey Belladonna - perfect Thrash Metal album for a kid!! This one's responsible that I love Thrash Metal!! Because right after that album I've tried other Thrash stuff and I really liked it)

Slayer - Hell Awaits (the most evil Slayer record! Here they came as close as you can get to Mercyful Fate when you play Thrash Metal! Wicked songwriting with a lot of twists and turns, eerie atmosphere and every song evil as hell (hehe1) )

Megadeth - Rust In Peace (It was summer 1990 every day I was listening to this record!! It's the perfect mix between Speed/Thrash and NWOBHM (total Diamond Head worship here!!) - the guitars are awesome!! Especially in Holy Wars!!)

Toxik - World Circus (In autumn 1991 I was travelling with my parents to holidays in North Italy. This tape was in my walkman and it absolutely freaked me out!! The falsetto mixed with awesome Power/Speed/Thrash riffs blew my mind away!!)

Overkill - Feel The Fire (Fist banging thrashy shredding Heavy Metal at it's best! Every song is a hymn of it's own!! Must Have!!)

Black Sabbath - Sabbath Bloody Sabbath (This was my first experience with Black Sabbath and it's still my favourite Black Sabbath album! The title track is one of the best metal tunes ever! The style on this album is rich in variety. Look at "Fluff" or "Who Are you", the poppy "Looking For Today" or the violins in "Spiral Architect" and of course the power in the title track! In my opinion this was the zenith of Black Sabbath's history!)

After those albums there are hundreds of other favourite albums like

Black Death - Same
Brocas Helm - Black Death
Satan's Host - Metal From Hell
Jag Panzer - Ample Destruction
Omen - Battle Cry
Metal Church - Debut
Cirith Ungol - King Of The Dead (or Frost And Fire)
Death - Spiritual Healing
Stormtrooper - Armies Of The Night
Stormwitch - Walpurgis Night
Torture - Terror Kingdom
Medieval - EP
Pungent Stench - For God Your Soul...For Me Your Flesh
Autopsy - Severed Survival
Angel Witch - Debut
Holocaust - The Nighcomers
Satan - Court In The Act
Sodom - Agent Orange
Kreator - Pleasure To Kill
Helloween - Walls Of Jericho
Blind Guardian - Tales From The Twilight World
Dissection - Storm Of The Lights Bane
Jaguar - Power Games
Dark Angel - We Have Arrived

aahhhh the list would be endless....right now hundreds of albums coming to my mind which are all awesome!!! It's an IMPOSSIBLE MISSION to list only 10...

A lot of great lists here. Like most of you guys have already said, it's almost impossible to list just 10. Bands like IRON MAIDEN, BLACK SABBATH, METALLICA,and SLAYER should be on anyone's list that calls him or her self a metal head. With that said however, let's not forget some of the bands that took the genre to the next extreme level.

POSSESSED- 7 Churches
DEATH- Scream Bloody Gore (First real death metal album I bought in 1988. Almost couldn't comprehend it)
MASSACRE- From Beyond
ENTOMBED- The Left Hand Path (The heaviest guitar sound on a record I had ever heard)
SLAUGHTER- Strappado
MASTER- Master
CELTIC FROST- To Mega Therion
VENOM- Welcome To Hell
BATHORY- Bathory (This album scared the shit out of me the first time I played it)
